Easy Chocolate Peanut Butter Cookies

Preparation time: 30 min (incl. freezer time)
Bake time: 15-20 minutes

Dark clouds take over the skies, the brisk wind picks up, and the chance of rain seems to be unavoidable; Fall is coming. 🍂 Need a pick-me-up? How about a soft, warm, and chewy chocolate peanut butter cookie?

Chocolate Peanut Butter Cookies

Ingredients:

1/2 cup unsalted butter (room temperature)
1/2 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1 cup all purpose flour
1/4 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
OPTIONAL- 1/3 cup chopped Milk Couverture Chocolate

Preparation:

  1. Cream together butter and peanut butter until smooth.
  2. Add both sugars and mix again until lightened, add egg and mix just until combined.
  3. Add all dry ingredients and mix.
  4. OPTIONAL: Add and mix under the chopped couverture chocolate.
  5. Once evenly combined, roll dough into 12 even balls. Place onto parchment paper and put in the freezer for 25 minutes.
  6. Preheat oven to 350F.
  7. Take the dough out of the freezer and bake cookies on lined baking sheet for 15 minutes.
  8. Allow to cool for 10 minutes before enjoying.
